Happy Thanksgiving

 I'm thankful for my family, a roof over my head, running water, electricity, and food to eat.  I'm thankful for my hard working husband who is furthering his education in order to support our family and make our future better. I'm thankful for our marriage that will last through the eternities. I'm thankful for friends, for my job, and for my healthy body.  I'm thankful for the Gospel of Jesus Christ, for the knowledge of eternal families and for the atonement. I am thankful for the opportunity to thank my Heavenly Father for these blessings daily through prayer. And today on Thanksgiving I'm grateful to share them with all of you!

and getting ready for our first Thanksgiving together without family... sad! And my Clayton is watching football. He's great moral support.
The song from Home Alone came on, and I pretty much lost it.... you know when he finally finds his mom??? Yeah I am standing in my kitchen crying. It just made me miss our family so much!
I'm crazy. (I put the song below...you'll ball your eyes out when you hear it too)

I can't wait until we can always be together for every holiday. Until then... here's to starting our own traditions! My smart little sister texted me today and told me to enjoy making our new memories, after all we will be telling our kids about this Thanksgiving someday!!

So I'm off to make some memories.

last night

My Martha rug got pulled out from under me....


I was happily on my way to nailing every home maker task thrown at me. And then..
The Rhodes Rolls ruined everything.
We ate dinner at 8, and these roll/muffins weren't done until 10.

In case you haven't made rolls, or watched anyone make rolls or live under a rock like i do... you have to let the dough rise for a long time and preferably in a warm place. Well, that did not go down at the Brown's place last night. No siree.

If I can take anything away from this feat turned embarrassment... it's that my mom was right, I shouldn't have taken every single Home Economics class in junior high and high school. They were obviously a waste of time. And heck, I'll just snowball on my little temper tantrum for a sec and tell you that I am for reals taking this warped, muffin-like rolls experience and translating it directly to be a message from something in the universe that is trying to tell me..

"Kate, you should not be eating carbs so late in the evening.. pull yourself together." 

c'est la vie.

Feels like I might burst if I don't tell you this... 
I have been dying to watch all the Twilight movies in preparation for Breaking Dawn: Part 2 to come out this weekend. Go ahead and judge! But we ALL know everyone likes the movies and/or wants Edward in their life, whether they are open to admitting it or not. I know I know, Kristen Stewart is awkward blah blah blah....I like her. Hashtag sorry not sorry.








And I would also like an entire humungous, delicious, pork salad from Cafe Rio. All of it, like even the tortilla part that I usually don't really finish. And the beans in the bottom too.

Sleeves where way too short + did not fit me AT ALL = I probably would have never worn it again!

Hello chic vest I might just wear every single day!


All I did was snip carefully just along the seam making sure not to cut the seam. I didn't care if it looked uneven, I was going for kind of a "distressed" look. My mom is probably looking at this and just cringing and shivering in her seat at how horribly I butchered this jacket. Sorry mom!


You better believe I will be searching for more clothes I can repurpose! And you should too!! Feel free to share your ideas!

Beach Day




Not sure how we got so lucky. To live in such a gorgeous place, and to have each other! We've been married almost 2 years (it will be 2 in March) and living out here together just feels like we're back on our honeymoon. Although I miss home, I'm excited to keep making memories here.
If you get a chance to press "Restart" on some of your goals, or if you need to relocate for school, work, whatever.... you should do it and move to the beach.

And PS incase you hadn't already noticed my complete attitude adjustment/180 between now and about 2 posts ago, I'd just like to say... remember to count your blessings, name them one by one! I'm learning that life is alllllllll about perspective. 

What's for dinner?

Shredded Chicken Enchiladas aka Heaven in your Mouth

I kind of made a lot because I was too lazy to cut the recipe in half and I figured it would mean less cooking for the rest of the week. I'm horrible, I know. Someday I will figure out what they call a "balanced meal" and how to prepare one. But for now we will make gobs of food and love it.

What you need:
4 cups cooked chicken (chopped, shredded, diced, whatever you want) I ended up buying 5 breasts
1 lb of grated Colby Jack cheese
2 cups sour cream
2 cans Cream of Chicken
2 4oz cans of diced chile peppers-- People! Get mild! Unless you plan to spend 15 min getting all the hot seeds out. I made the mistake of buying fire roasted and the taste was really good. They were balanced out by the sour cream, but that was after I took most of the seeds out. So if you don't like spicy, or if you have kids, get mild.
10 medium sized flour tortillas 
4 green onions

What to do for the chicken:
First figure out how you want to cook your chicken. I obviously chose shredded. (Mostly because I wanted to impress my husband!!) and because I wanted the chicken to be really juicy.
To season it just added salt and pepper to both sides of the chicken.
1. Get a 12" pan (with a lid) and heat it to med-high, add enough olive oil to touch the bottom of all the meat. Seems like kind of a lot. But as Nike says..."Just do it."
2. Add the meat to the pan in a single layer, every piece needs love from the pan
3. Put the lid on and cook for 1 minute. Flip the chicken over.
4. Turn the heat down to medium-low and cook for 10 min. Do not take the lid off. Unless you want NOT juicy shredded chicken. We're definitely going for juicy though.
5. After the 10 min, turn the heat to low and cook for about 5 min. Then turn the heat off and let the moisture settle in. 
6. Now you can take the lid off....I promise it's ok now! Make sure the chicken is fully cooked (no pink inside) if its not I would just put the lid back on and cook on low for however long it takes. Sometimes the chicken breasts just come super thick...it's not you it's the chicken. 
7. Use either forks or tongs to shred the chicken. I was going for a Cafe Rio kind of appeal (once again, really trying to impress the husband) so I shred it quite a bit. But you can just dice it into little pieces at this point too if you want. You just want good small bite sized pieces to be in your enchiladas.

Now!
What to do for the enchiladas:
Preheat your oven to 350 degrees and grease a 9"x13" casserole dish

1. In a large bowl mix your sour cream, diced chile peppers, cream of chicken, and your juicy shredded chicken!
2. Add a layer of this mixture to the bottom of your casserole dish.
3. Add a heaping tablespoon of the mixture to the center of a tortilla, sprinkle with a handful of cheese, wrap it up and set it in the casserole dish.
4. Continue to do this until you have all ten tortillas in the casserole dish.
5. Spread remaining mixture on the top of your enchiladas
6. Here's where some of you may cringe, but you're going to sprinkle the rest of your cheese on top of it all. I was completely open to it. Go ahead and judge me.
7. Finely dice your green onion and sprinkle it on top of the cheese
8. Cover with foil. Bake for 45 minutes.

Enjoy!!!
Should feed about 5-6 people... or in our case 2 people with leftovers for 3 days :)

New Beverage

So lately I've been trying my very hardest to stop drinking,
Shhhhhh don't say it out loud. It might hear me!!!!!

 diet coke. 

Diet Coke and I have had a love affair for as long as I can remember. 
Since we've moved out to California, we have cut down on a lot of extra costs and unfortunately diet coke falls under 'extra'. As in, unnecessary.  It pains me to say it!! But it's true. Since I have stopped I have had the most insane headaches! Which is not good.
So! What is my new pretending to be favorite beverage?

water.
aqua, H2O, Adam's ale, pure liquid hydrogen and oxygen.
Whatever you call it. Let's be honest: It's dull. It is not tasty! So I have come up with a solution... aka I found yet another thing to try from Pinterest. And it is........

This gorgeous drink. 


Step 1. Gather supplies
For 2 quarts of water you'll need 
about half a cucumber 
one maybe, one and half lemons 
and 4 or 5 leaves of mint

Step 2. Slice Slice Slice 
(no need to slice mint leaves)

Step 3. Add water and let it sit in the fridge for the night. Enjoy it in the morning. 
Should be good to drink for the next few days

*Warning: The mint leaves will start to turn brown after about a day or two. The flavor will be very strong. I usually take them out after they reach this point and it works out great. Still nice and minty!

A great way to preserve your mint leaves is to use either tissue or paper towel inside the package. The tissue absorbs extra moisture in the packaging and helps the leaves stay crisp. Just lining the top is good enough.
I do this with salad as well!! Little trick I learned from my mama. 



What are some benefits of this awesome beverage, you ask??
This is a natural detox drink. It will help flush impurities out of your system and drrrrrrumrollllll please!!! 
Maintain a flat belly. 

Need I say more?

Tang from the lemon, cool from the cucumber, and refreshing zest from the mint makes for the perfect thirst quenching drink. This also helps curb my appetite! I just pour it into a cup with a straw add some ice and take it to work with me and it helps me fight cravings!

Some things

Just thought I would stop by this blog for once and jot down a few thoughts!

Everything is great here in San Diego. Except, I am really really homesick. Like REALLY HOMESICK. I miss my family. I miss my friends. I miss my old job. I miss having more money. haha. (California is so expensive) I miss having Cafe Rio 5 min away. I miss the drive thru at Sonic. I will probably hate myself for saying this one day, but I am sad I'll be missing fall and winter!!! I miss everything about home! (insert the ugliest crying face you can imagine here--the kind with heavy tears, lots of boogers, and your face hurts so bad from squinting and whining... etc. know what I mean?)

But don't worry I'm going to be ok. It helps me a lot when I remind myself these things:
1. It will not be this way forever. You will see your family and friends soon. You will be able to live in Utah again eventually.
2. Yes i have to literally tell myself these things.
3. Hello! You are in San Diego, California, Kate! ENJOY IT!
4. You have an amazing apartment. You are near the beach. You are part of an incredible ward. You have the perfect job, and are already making friends!
5. You have Clayton.
6. It will ALL be worth it in the end.

Whoever is reading this might be thinking.... "This girl has serious issues." And you are probably right! But this is what I am going through. I wish I could have a better attitude about it without having to remind myself those things (1-6). It really is silly.
But this is me. We all deal with things in our own way, that's really all I can say.

So with that said, I have decided to change my attitude. No more being depressed and feeling sorry for myself. I have an amazing life that I need to start living.

In other, less depressing, news I've been dreaming up new crafts left and right people! Here are some photos of my nifty shower curtain project!
 First I did some math and taped off my zig zag lines. This took me SO long. I don't even think I actually used math. I'm still confused about it. 
I planned on making more zig zags but just how it all got lined up I ended up only painting the bottom ones. Long story short, I probably couldn't do it again.
I laid newspaper down so I wouldn't stain the carpet.
Then I mixed just regular brown acrylic paint with some fabric medium (2 parts paint, 1 part medium).
 I painted the perimeter of the zig zags because the shower curtain has bumps all over it and I had to press down the tape really hard where I painted so that it wouldn't leak through and mess up my straight lines. And then I just painted away! I used a foam paint brush. Let it dry for the night and it was done!
And voila. The before and after photo. See how it just adds a little "umph" to our once very plain bathroom?? 
I used a pencil to mark where I was going to tape and I tried so many times, there's these little pencil markings all over it. I tried going back and erasing them but I'll probably have to try something else to lift out the led. And unfortunately the paint did leak through the bottom of the curtain-it would have been bad if I hadn't laid down newspaper. But there were still some spots it got super saturated and even the newspaper didn't help. Whoops! And now I have some newspaper stuck to the back from when it was drying. Just lovely. 

Lesson: Nothing ever goes as smoothly as you hope it will. 
BUT 
Luckily I have the awesome Instagram app to make my crafts and me seem so much prettier than real life!!!! Yay!
